Fulmer Limited Selection

The story of Fulmer Limited Selection is extraordinary for two key reasons.

#1: only unique, rarely produced honeys are included in the selection. Honeys that are unavailable for many years because the environmental conditions simply do not allow them to be produced.

The #2 important reason why Fulmer Limited Selection is so special is that when these rare, long-awaited honeys are being produced, the beekeepers of the Fulmer-family combine them with their century-old experience. This creates new, never-before-experienced flavour combinations that are completely unique and will never be available again due to changes in the environment.

The true speciality of this creamy honey is that it shows two different aspects of the lavender flower in one. In addition to the flowers it is also a glimpse of two separate worlds of cultivated and wild nature, as the refined flavours of the vast cultivated fields of the French Pyrenees are combined with the special taste of the tiny wild lavender of the Spanish side.

The outcome is a creamy, silky honey with strong, simplified aromas.

Siaagn-torecila honey

The special natural features of the French side of the Pyrenees form the basis of this honey, which are perfectly complemented by the wildflowerish, ancient excitement of the Spanish side. The cuvée made from their combination is a creamy honey with neutral acidity and strong, exciting aromas. To preserve its value, it is recommended to be consumed on its own, but can also accompany hard cheeses, wines, salads or desserts.

On the French side of the Pyrenees, in a remote area of the Provence region, bees can roam unparalleled territories. It is no coincidence that this is a region with a traditionally strong gastronomic culture, which is enhanced by vast fields of planted flowers. The meeting of mountains and the sea, the Mediterranean and continental climates creates incomparable nectars
In the north-east of Spain, on the other side of the Pyrenees, the wild flowery fields provide the other basis for this cuvée. In the sandy, Mediterranean, drier regions, the wild plants are short-stemmed, taking care of the precious nectar. In some years, favourable rainfall allows here the production of rare monofloral wildflower honey.

The art of honey cuvée

The preparation of cuvée honeys is a process requiring artistic precision, during which beekeepers acting like honey-sommeliers. Firstly they taste the region's finest honeys, then they select the few from which they carefully create through interbreeding selected honey specialties.

Fulmer Limited Selection honeys are always named after a special area of the given region. The exact locations of these mysterious hills, valleys and lush hillsides are known only to the local beekeepers who have worked together with the Fulmer-family for many years.

Wild honey of a "hundred thousand" mountain flowers

Due to the harsh weather in the Spanish Pacific Highlands, bees rarely leave the hive and the collection season is long. That is why the special honey produced by the "thousand" flowers of this region is considered a rare treasure. It was not easy to find the thousand and one ingredient to tame this wildness, but the unique aroma of "Ámorakác"- / "Amor Honey"-honey proved to be the perfect choice.

The result of the interbreeding of these two honeys is the wildness enclosed in the honey itself. It is characterised by strong close-to-nature scents and long-lasting harmony of intertwined flavors.

Cabimon-rös honey

This special, mountain cream-honey is so aromatic that it is particularly worth consuming cold. The big advantage of this is that the sugars with different crystal structures dissolve one after another in our mouths, and they bring new and new experiences provided by the flowers. You can even feel the special taste of the small-flowered, but extremely pollen-rich houseleek. Eating it is a wild romantic experience in itself, but it can also be a worthy accompaniment to characterful soft cheeses.

In the northern mountains of Spain, in the high, windy regions, it is not easy for bees. In addition to the long collection period, a great deal of attention is also required for the successful cultivation of coexistence with bees. That is why there are few apiaries where the special honey provided by the "thousand" flowers of this region would be available. Even the uniqueness of the houseleek is there, and only a small detail separates it from perfection.
The only flavour that can still add value to this cuvée is the clean aroma of "Ámorakác"- / "Amor Honey"-honey. Out of hundreds of sites, a hidden Hungarian area was selected, where the perfect "Ámorakác"- / "Amor Honey"- honey is made in its purest form, without the cross-pollination of other flowers.

Exclusive selection

Fulmer Limited Selection varies from year to year, region to region. Quality is the most important criteria in the selection process, so each year the selection includes honeys that are only available in small quantities to a limited clientele from the best and most delicious honey assortments.

For the Fulmer Limited Selection 2022 collection, Ferenc Fulmer-Takács and his son Péter Fulmer-Takács together selected the honeys from the hills of France, Italy, Spain and Hungary, blended these varieties together based on the Fulmer family's century- old experience.

Heather honey meets the power of volcanoes

The tiny-flowered heather is a very sensitive plant, so it is extremely rare that the aromatic honey made from it is available in sufficient quantities without mixing it with other flowers. However, this miracle is available in France, close to the ocean, in national parks protected from humans.

However, for the best experience, you need a refreshing friend. The slightly citrusy flavours of the honey of the crowned honeysuckle, which grows on the volcanic ash of Mount Etna in the fields of Sicily, is the perfect match for the full-bodied and intense aromas of heather.

Brouyee-saferno honey

Heather honey is a very rare and aromatic type. French honeysuckle, on the other hand, is homogeneous, refreshing and mild, which is why it helps to separate the aromas of the heather. The creamy honey born from the combination of the two is vividly floral, but also has flavors reminiscent of ripe fruits.
